The green peppercorns are hand-picked and dried to a moisture level of 10–11%, resulting in a high concentration of piperine—the compound that gives pepper its characteristic flavor and aroma, with notes of citrus and hints of eucalyptus, lightly smoky and spicy, a strong taste with a long, warm finish.
